Angelica is a relatively unknown vegetable in this part of the world. It’s a member of the Apiaceae family, and originates from Europe. It lives as a perennial down to zone 4, and once established, Angelica can be harvested at any time of the year. All parts of the plant are edible, but typically used as a herb or spice rather than a main feature vegetable. The leaves and shoots taste best eaten in the spring; they have a sort of anise-like flavour, and can be used in salads, soups, and deserts. The root tastes best when harvested in the autumn of its first growing season, and although edible and delicious, it's typically used for its antispasmodic, diuretic, expectorant, stimulant, and tonic qualities. This said, the root can be sweetened with sugar, and is eaten as candy.

Growing Instructions
Although not necessary, Angelica seeds will have a higher germination rate when stratified, so its best so sow them in the autumn before the soil becomes too hard to work. They require light to germinate, so sow them on the soil surface. Seeds can take between 2-4 weeks to germinate, but they can sometimes take less time too. These plants do best when spaced every 6-8 inches. Angelica grows best in full sun, and enjoys consistently moist soil. The plants are very disease and pest resistant too.
