Green Callaloo, aka Amaranthus viridis, is a fast-growing leafy vegetable in the Amaranthaceae family that is widely cultivated throughout the Caribbean, Africa, Asia, and tropical regions around the world. Although technically a tender perennial in frost-free climates, it is most commonly grown as a warm-season annual in temperate regions. Green Callaloo is prized for its abundant harvests of tender leaves and young shoots, which have a mild, earthy flavour similar to spinach. Rich in vitamins, minerals, and antioxidants, it is a highly nutritious vegetable that is commonly steamed, sautéed, or added to soups, stews, curries, stir-fries, and traditional callaloo dishes. The plants grow rapidly, tolerate heat exceptionally well, and continue producing fresh foliage with regular harvesting, making them one of the most productive leafy greens for the summer garden.

  • Growing Instructions

    It's best to sow Green Callaloo seeds after all danger of frost has passed and the soil has warmed. Seeds can be started indoors 3–4 weeks before the last frost or direct sown outdoors once temperatures are consistently warm. Sow the seeds about 6 mm (1/4 inch) deep in moist, well-drained soil. Germination typically occurs within 5–10 days in warm conditions. Thin seedlings to allow adequate spacing, and grow plants in full sun for the highest yields. Harvest the young leaves and tender shoots regularly to encourage continuous production throughout the growing season. Green Callaloo thrives in hot weather and remains productive long after many cool-season greens have stopped producing.
