Mad Hatter is a fantastic variety of pepper of the baccatum species. For some reason, this pepper has been given many different names such as Bishops Crown, Jokers Hat, Monks Hat, Christmas Bell, and others. Not only does does it stand out in the garden due to its unique shape, but it stands out in the kitchen too, as the flavour is fruity and sweet, and they have a very tolerable heat level too. Like many baccatums, these plants can grow quite large; about 5 feet tall, and 3 feet wide. The plant is very prolific, and in just one growing season, it can yield over 100 fruits. The pods taste very sweet and fruity, and the heat is mild; it's a perfect snacking pepper for those that crave a little heat, and they can even replace bell peppers in certain recipes. As well as being an excellent choice for fresh eating, the pods make an excellent tasting sauce. The dried fruits make amazing flakes and powder too.


All seeds are organic and open pollinated.

  • Growing Instructions

    Like all capsicums, it’s best to start Mad Hatter seeds as early in the season as possible; we start them here on the farm in January. It's good to sow them in a sterile growing medium; most available seed starting soils should do the job nicely; we use sunshine mix (peat moss and perlite). The soil should be made moist, but not damp. Sow the seeds 1/4 inch below the soil surface. Store in a warm area until tiny sprouts emerge from the soil. A heat mat greatly aids in this step, but is not necessary. Seeds can take between 4-8 weeks to germinate, but they can sometimes take less time too. Once germinated, and the first true leaf has formed, it's time to pot up to a larger container that contains a good quality potting soil. Transplant to their final location when the nighttime temperatures are consistently 8°C or higher. These peppers are perfectly suited for growing in pots or containers; I recommend using a 5 gallon pot or larger. Peppers do best when grown in full sun, but can provide an okay yield when grown in partial shade too.
